Mtedza (Groundnut Cookie)
Serves 14 cookies
Ingredients
Sugar – 2 tbsp
Butter – ½ cup (room temperature)
Coarsely chopped Peanuts – ¾ cup
Flour – 1 cup
Vanilla extract – 1 tsp
Confectioners’ sugar – for dusting

Stand mixer
Oven
Baking pan

Directions
- Preheat the oven to 350 F
- Add the sugar, butter (at room temperature), and vanilla extract to the stand mixer and mix at low speed until it is well incorporated and creamy
- Add the coarsely chopped peanuts and mix until well incorporated
- Add the flour and mix until it pulls together as a crumbly dough
- Using your hands roll the dough into little balls (cookies)
- Line the baking tray with parchment
- Place the cookies on the tray and bake in the preheated oven for 20 minutes
- Allow to cool and roll in confectioners’ sugar and serve sprinkled liberally with more confectioners’ sugar!
