Malawian Mango Chicken (Tested)

Serves     6-8

4 cups cooked shredded chicken
1-2 sliced bell peppers, green or red or combination
1 sliced mango
Peanuts (to taste)
Lime wedges for garnish

Sauce

¼ cup pineapple juice
¼ cup soy sauce
2 tablespoon. vinegar, I used cider vinegar
1 tablespoon. minced ginger
1 tablespoon. flour
1 tablespoon. brown sugar

Mix the sauce ingredients in a bowl. Add sauce to the shredded chicken and let marinate at least one hour.

Heat up a sauté pan with a bit of oil and sauté the green pepper for a few minutes to soften. Add the marinated chicken and continue to sauté until warmed through. Turn out onto a platter and garnish with diced or sliced mango, peanuts and lime wedges.

Serve over a steaming bed of rice.

Recipe curator’s note: I tested this dish and liked it a lot, especially for how simple it is to prepare. Just purchase a rotisserie chicken and that makes your job very easy. It’s a bit bland, so make sure you have lime wedges to brighten things up. And I would recommend spicing it up as well with maybe a chopped chile added to the mix. Malawians prefer their food not too spicy, so I leave that choice up to you.
