Mtedza (Groundnut Cookie)

Serves     14 cookies


Sugar – 2 tbsp
Butter – ½ cup (room temperature)
Coarsely chopped Peanuts – ¾ cup
Flour – 1 cup
Vanilla extract – 1 tsp
Confectioners’ sugar – for dusting

Stand mixer
Baking pan

  1. Preheat the oven to 350 F
  2. Add the sugar, butter (at room temperature), and vanilla extract to the stand mixer and mix at low speed until it is well incorporated and creamy
  3. Add the coarsely chopped peanuts and mix until well incorporated
  4. Add the flour and mix until it pulls together as a crumbly dough
  5. Using your hands roll the dough into little balls (cookies)
  6. Line the baking tray with parchment
  7. Place the cookies on the tray and bake in the preheated oven for 20 minutes
  8. Allow to cool and roll in confectioners’ sugar and serve sprinkled liberally with more confectioners’ sugar!
